Sweet treats for July sees an all time classic have centre stage on BBBB. Yes, it’s chocolate fudge cake! Well, chocolate fudge cake kit from Tesco. Let’s open the box and get baking.
Inside the box there are two pouches: one with the cake mix, the other with frosting mix. To the cake mix you must add…
- 2 medium eggs
- 90ml semi-skimmed milk
- 30ml vegetable oil
Mix together and divide the batter equally between 2x 20cm cake tins. Note – non stick bakeware: do you trust it to do its job? Same here. I grease and flour the tins to be doubly sure.
Although the second photo doesn’t show it, I didn’t divide the mixture 50/50. More like 60/40 but it will do for today. With the oven set @180°c (non fan) bake for 20 minutes. I’m on edge baking sponge cakes, and doubly so when they contain cocoa powder. Visual signs of ‘baked’ are a bit limited really. Best method is the skewer test: if the metal comes out clean then the cake is done. Unsurprisingly there is some leeway in total baking time here: my two sponges were ready in 15 minutes. Old oven, dodgy thermostat.
Let the cakes cool for five minutes then turn out on a wire rack (or red cloth). Did they stick? No, they didn’t =D
To make the fudge frosting add to the dry mix:
- 50g unsalted butter
- 30ml semi-skimmed milk

There is enough frosting to cover the top and sides of the cake but spread it thinly and with care. I guess the recipe is designed to give you just enough with no waste. I used a fork to pattern the top before dusting with extra cocoa powder.
This is one of those moments when I think ploughed field 😉 However, it’s all about the taste on BBBB, so let’s try a slice of this chocolate fudge cake. Moist and very rich with all the buttery frosting. Could easily feed twelve people as dessert with a little cream. FYI the box tells us the cake serves eight at 347 calories per slice! Don’t go on a binge with this.
