Why I didn’t spot this mix on my previous shopping trip is hard to say, but I picked one up this time. Yes, it’s sweet treats time again on BBBB! And today we have Lemon Drizzle Cake from Tesco…

Overall, the Tesco cake mix range is pretty varied and I’ll get them all reviewed on here over the coming months but this drizzle cake is first (if only because I love the homemade ones I get from the WI).

Open the box and you’ll find two bags: one with the lemon sponge mix and one with the drizzle (!). You will also need the following:

  • Two medium eggs
  • 80ml vegetable oil
  • 60ml cold water
  • 15ml boiling water
  • Two pound loaf tin

Combine everything (except the boiling water) with the sponge cake mix

Grab a 2lb loaf tin, line it with parchment and tip the batter in there. Into the oven @160°c for a surprising 40 minutes…

At this point I think the cake has had about five minutes longer baking than it needed, but the fear of a collapsing sponge stopped me checking up before time. Leave it to cool completely then mix the boiling water with the icing powder and spoon the icing over your cake to give something like this…

Yeah, I know. The 15ml boiling water is TOO MUCH for the amount of powder icing in the kit. However, it has a fantastic flavour of lemon sherbet – not expecting that at all. 

In conclusion:

  • Decent quality cake mix at a far better price than our Betty can manage…
  • Drizzle icing too wet when made as directed…
  • Great to eat on Sunday afternoons with a pot of tea…

Bake again? Not if the WI are in town!
