Many years ago my Dad made for me a walkie talkie set from two empty syrup cans and a length of string. You might know the type of thing: stretch the string until really tight then speak into one can as a friend holds the other to their ear. Basic telephone line! Genius. 

So today on BBBB we have Paul Hollywood Bran & Coconut flapjacks!You might be wondering “flapjacks have to be the easiest bake ever, so why does this mix exist?” and you would be correct. Luckily for me (and for this blog) it does exist and I expect Mr Hollywood to exploit gaps in the market that aren’t really there.

Muesli or sawdust? Erm…

Opening the bag of mix I noticed the whiff of coconut straight away. If bran has an aroma I didn’t get it (or did I?). You get 465g here, 33% of which is oats, 11% wheat bran and 10% desiccated coconut. Tip this little lot into a mixing bowl (see above) and add…

  • 150g unsalted butter
  • 150g golden syrup (I didn’t have enough so in went 50g maple syrup)
Meltdown

Get the butter and golden syrup together and heat until melted. Pour the lot into the dry mix and get it all incorporated…

Line your baking tray with parchment or silicon paper, spread the mixture evenly and bake for 20-25 minutes until golden.

Makes 20 squares.

What can I possibly say about these flapjacks that you might not be expecting? They’re delicious. Moist and chewy. What did expect – they’re bloody flapjacks!! Quite what input Mr Hollywood had in this product I can’t imagine, but perhaps he has another syrup can and a length of string so we can talk.
